Oysters with Lemon Mayonnaise

A true zesty treat

  • Serves 4 People


  • 24 Barnes Wild Bluff Oysters, well drained
  • ¾ cup mayonnaise
  • 2 tablespoons chopped parsley
  • 1/2 teaspoon grated lemon rind
  • 1 tablespoon lemon juice
  • 1 teaspoon seeded mustard


The oysters can be served raw or lightly cooked by grilling or stir-frying in a small amount of oil. Combine the mayonnaise, parsley, lemon rind and juice and mustard in a small bowl; mix well. Serve the oysters in shells, topped with a spoonful of lemon mayonnaise or serve the mayonnaise in a small dish and dip the oysters into the mayonnaise.
