Tomato Vinaigrette, Tartare Sauce, Garlic Vinegar Sauce & Avocado Sauce

  • Serve raw or lightly cooked oysters, or small oyster fritters with your pick of these tasty dipping sauces

Sauces

Tomato Vinaigrette

1 tablespoon tomato puree
1/4 cup olive oil
1 tablespoon vinegar
1 tablespoon lemon juice
1/4 teaspoon salt
Freshly ground black pepper

Tartare Sauce

1/2 cup mayonnaise
1 tablespoon chopped capers
1 tablespoon finely chopped gherkin
1 teaspoon chopped parsley or chives
1 tablespoon lemon juice

Garlic and Vinegar Sauce

2 cloves garlic, crushed
1 tablespoon lemon juice
1-2 tablespoons sugar
Pinch chilli powder or cayenne pepper
4 tablespoons vinegar (preferably wine or balsamic vinegar)
Salt to taste

Avocado Sauce

1 ripe avocado, peeled
1 tablespoon lemon juice
1 tablespoon mayonnaise
1 clove garlic, crushed

Methods

Combine all ingredients and mix well.
