Tomato Vinaigrette, Tartare Sauce, Garlic Vinegar Sauce & Avocado Sauce

Serve raw or lightly cooked oysters, or small oyster fritters with your pick of these tasty dipping sauces


Sauces

Tomato Vinaigrette

  • 1 tablespoon tomato puree

  • 1/4 cup olive oil

  • 1 tablespoon vinegar

  • 1 tablespoon lemon juice

  • 1/4 teaspoon salt

  • Freshly ground black pepper

Tartare Sauce

  • 1/2 cup mayonnaise

  • 1 tablespoon chopped capers

  • 1 tablespoon finely chopped gherkin

  • 1 teaspoon chopped parsley or chives

  • 1 tablespoon lemon juice

Garlic and Vinegar Sauce

  • 2 cloves garlic, crushed

  • 1 tablespoon lemon juice

  • 1-2 tablespoons sugar

  • Pinch chilli powder or cayenne pepper

  • 4 tablespoons vinegar (preferably wine or balsamic vinegar)

  • Salt to taste

Avocado Sauce

  • 1 ripe avocado, peeled

  • 1 tablespoon lemon juice

  • 1 tablespoon mayonnaise

  • 1 clove garlic, crushed

Method

Combine all ingredients and mix well.
