Oysters Casino
Perfect for bacon lovers
Serves 4 People
Ingredients
24 Barnes Wild Bluff Oysters
4 rashers bacon, chopped
1/2 cup finely chopped onion or spring onion
4 tablespoons butter
1 teaspoon lemon juice
Freshly ground black pepper
1 teaspoon Worcestershire sauce (optional)
1/4 cup finely chopped green or red pepper
Method
Drain the oyster and placed in oyster shells. If shells are not available arrange a single layer of oysters in a shallow, medium-sized heatproof dish or in individual heatproof dishes. Fry chopped bacon until partially crisp, add onion and butter and continue cooking until onion is tender. Add the remaining 4 ingredients. Spread the bacon mixture over the oysters. Cook under a hot grill for about 5 minutes.
Variations
Oysters Casino can be baked at 200-220 degrees celsius for 10 minutes or until hot.
Celery, finely chopped, can replace the green or red pepper.
Sprinkle with grated Parmesan cheese before grilling.
